]]>The house links are the best BBQ sausage outside of Lockhart or Luling. This day was no different. Cajun tinged fine ground encased heaven.
The beef we ordered was “hi-top” brisket, the fatty stuff. Now, they still have the “republican cut” brisket too, but you can get that stuff at the next catered corporate event you weasel yourself into. It’s pretty much the same everywhere to me, anyways. So get into the nasty stuff at Burns’ and ask for “Hi-top beef”.
Now, the ribs. I’ve had them at Burns’ plenty of times and been perfectly satisfied every time. Ribs might be my favorite thing about barbecue, if they do them right. I can’t recall a Houston rib experience being anything but good at best. I don’t know if the sun was shining right or if they sprinkled crack on them or what, but this was the best rib I’d ever eaten in Harris County. Swimming in sauce and falling off the bone. Pit barbecue ribs cooked perfectly, and more quickly than my favorite kind of ribs… slow smoked hill country style.
I just felt like I needed to bring that to anyone’s attention who might be reading this thinking “Fuck you Omar, I want to know about that good shit!”. Well there it is, folks. Burns’ does pig right. The sausage is the best non-German settlement sausage in Texas, and the ribs will always satisfy… and sometimes totally blow your mind.
